Zucchini/Artichoke Torte ala Genova Deli

½ large or 1 medium onion diced/ garlic
1 large or three smallish zucchinis (enough to fill one large strainer)
1 can artichoke hearts diced (chop and drain)
1 tb dried oregano
1 tb Italian seasoning
1 tsp salt 1 tsp pepper
1 ½ Tb crushed garlic
3 eggs
1 cup parmesan cheese
½ cup Italian bread crumbs

Add diced onions to frying pan with olive oil…sauté
Add spices /salt and pepper/garlic/diced artichokes
Mix and whip up 3 eggs and add to somewhat cooled onions and then
add the cheese and breadcrumbs. Mix
In a separate pot cook zucchini for about 10 min. make sure that a lot of
the seed area is cut away to not have it so watery in the end (or you can
do it after the 10 min of cooking) Drain and press down to strain out ALL
water and chop.
Add diced zucchini to pan mix well….Pour into 8x8 oiled pan and really
smash down well and smooth sides all around…Bake for 30 min or so at
355 Until brownish on top…cool and enjoy
