Zucchini Souflatte

3 medium zucchini, sliced, steamed and well drained

2 eggs beaten

4 slices Swiss cheese (including singles if you have them), torn in small pieces

1 10-12 oz package frozen corn

 

1/2 cup cracker crumbs

1/4 cup grated Parmesan Cheese

1/4 cup butter melted

 

Mix first 4 ingredients, put in oven proof casserole. Mix crumbs, Parmesan and butter, sprinkle on top of casserole. Bake at 350 degrees for 30 minutes.
