The utterly charming Pincushion Flower is an old-time favorite in unusual shades of blue, purple, red, white, pink, and salmon. A great cut flower, it has long, wiry stems topped with 1-inch-wide, mounded blossoms that wave in the slightest breeze. A hardy annual, scabiosa can be direct-seeded in fall in the southern half of the U.S. and early spring in the northern half. Pincushion flowers add texture and a pop of contrasting color to zinnia bouquets. For the longest possible vase life, cut the flowers when half the outer petals have unfurled.
