My favorite way to prepare zucchini is to grill or pan-roast them on top of the stove. I use small-to-medium size zucchini and cut them lengthwise into 1/4-inch thick pieces. Toss the zucchini with olive oil and sprinkle with a little sea salt. Arrange the strips on a medium-hot grill or lightly oiled , hot cast iron griddle or large frying pan. Grill a few minutes until the first side is nicely browned, then flip and grill the second side.
These are delicious just as they are, or you can chop and mix them with other grilled vegetables (onions, tomatoes, eggplant, peppers) and fresh herbs for a great pasta sauce or ratatouille.
Or chop them up with grilled tomatoes and onions and jalapeños or other hot peppers for an awesome hot sauce.
