Wild Fennel. This variety is grown for its leaves, pollen, and seeds; it does not make bulbs. Wild fennel fronds are used for flavoring fish and soups. Pollen from the pretty yellow flowers is considered a delicacy and is used for its intense flavor. Seeds, which are produced abundantly, have a strong fragrance and clean flavor; they are often used in making fennel sausage. Beautiful yellow flowers are suitable for cutting. 30-40 inches high. 75 days. 4 grams = approximately 1200 seeds. Approximately 300 seeds per gram.

I have a patch of these that seems to manage to overwinter and come back each year (zone 7). Good for pasta con le sarde and fritters. But most of all it makes a great finocchietto liquer. Pollinators love it too.
I planted the seeds as soon as I received them. It grew fast. The fennel is beginning to flower. I brought back wild fennel seeds found along the road in Sicily. It's not the same wild fennel I found. The plants look different. I'll pass judgment after I make fennel sausage with the seeds.
