Zucchini with egg (doesn't really have a name)

6 small zucchini thinly sliced on a mandoline or with a knife into discs
2 eggs
1/2 teaspoon dried or 1 1/2 teaspoon fresh thyme
salt and pepper to taste
olive oil
 
Directions: Saute zucchini discs in the olive oil until soft, add salt and pepper. Add dry thyme at the beginning of cooking or fresh once zucchini has softened. Crack the two eggs into the pan with the zucchini and mix thoroughly so that the egg is distributed throughout the vegetable. Once the egg has cooked for a minute or two, serve and enjoy!
 
Zucchini with potato (also, doesn't really have a name)
 
6 small zucchini cut into 1/2 inch cubes
4 small potatoes (I use Yukon Gold, but any will work) cut into 1/2 inch cubes
1 minced garlic clove, or 1/4 teaspoon of garlic powder
1/2 teaspoon of dried thyme or 1 1/2 teaspoon of fresh thyme
salt and pepper to taste
olive oil
 
Directions: Start the potato pieces in the olive oil until partially cooked (approximately 10-12 minutes), then add the zucchini cubes. Add thyme, garlic, salt and pepper and saute until the vegetables are soft. Serve and enjoy!
