My favorite summer squash
I absolutely love this squash! The texture is dense and buttery with great flavor, and it doesn't get mushy like ordinary zucchini has a tendency to. It's very good sauteed or roasted with corn and peppers, or sliced very thinly on a mandoline and eaten raw with lemon juice, olive oil, and whatever other vegetables and/or herbs you have on hand.
