My Cousin Eileen's Zucchini Bisque

1 small onion
1/2 cup butter
1/2 tsp dried/1 cup chopped fresh basil
1 cup heavyy cream
1 1/2 lbs (6 cups) shredded zucchini
2 1/2 cups chicken broth ( could use vegetable)
1 tsp salt
ground pepper to taste
Finely chop onion, In large saucepan, melt butter, add onion cook until limp. Add shredded zucchini, add chicken stock. 
Simmer 15 minutes.
Puree mixture in blender or food processor in two batches.
Add spices and cream, mix well.  
Serve hot or cold ..makes 1 1/2 quarts.
