This is my favorite chicory. The leaves are sweet all year long, they grow and look like weeds but have the most beautiful flowers all summer and fall. The leaves taste like a kale with a more mineral taste. I bake mine with corned beef and onions. I also roast the roots for a coffee substitute. The roasted root smells so good, I have been using it as a fall potpourri so I don’t know how the beverage tastes. It’s drought tolerant and requires minimal summer rain. Also grows in my tree roots and is easy to harvest.
